A croissant is a typical French and traditionally Austrian breakfast pastry made from sweet puff pastry that is rolled into a crescent shape before baking. Croissants belong to the category of viennoiserie.

Ingredients

For 4 Batch(es) Serving size 10 Croissants

500 g Flour
60 g Sugar
125 g Milk
125 g Water
10 g Salt
5 g Yeast
50 g Butter
250 g Butter 80%+ fat block

Croissants Directions

  1. Day 1 (30 min): Mix all ingredients for the dough, knead for 5 min,
  2. Add 50 g butter, knead until smooth (10 min),
  3. Form a rectangle and leave to rest overnight.
  4. Day 2 morning, Prepare the block of butter
  5. Wrap the butter in the dough,
  6. Fold it in half and leave to rest for 1 hour,
  7. Fold it once and leave to rest for 1 hour.
  8. Day 2 afternoon (or day 3): Roll out into a rectangle of approx. 24 x 50 cm
  9. Cut 10 triangles (10 cm base x 24 cm)
  10. Roll them up carefully
  11. Leave to rise until the volume has doubled (2-3 hours)
  12. Brush with egg beaten with a little water B
  13. Bake for 15-18 minutes at 180 °C

Notes

  • The butter should be malleable (not hard, not melted).
  • Allow sufficient time for rising – the dough should double in volume.
  • If the dough is difficult to work with, allow it to rest in the refrigerator for 10-15 minutes.
