Grass cheese is a typical seasonal cheese. After a long winter in the stable, the North Holland cows can once again taste the great outdoors, tender grass with a less fibrous structure. the new grass provides the milk for a cheese with a creamy texture and milder taste. When the goats are used to the fresh grass again, the cheese becomes more pronounced and firmer. Because grass cheese has such a specific taste, it is in the store for a month once a year.
Note the Red Seal, the quality mark that is applied to the Noord-Hollandse Gouda. Only cheese from a cheese maker from North Holland, made with milk from local cows, can bear this seal.
