Ingrediënten

400 g fresh Spinach
6 Eggs, beaten
2 el Olive Oil
1 Potato, in fine cubes
2 Shallots, shredded
Salt and pepper
Mixed salad

Spinach omelette Directions

  1. Heat the olive oil in a non-stick pan and fry the potato cubes and shallots for about 2 minutes
  2. Add the spinach +/- 1 minute, until it is weak. Add the eggs with some salt and pepper and stir until the egg is evenly distributed on the pan. Reduce the heat and cook the egg mixture until done without stirring.
  3. Serve the omelet upside down on the plate with a mixed salad.
