1 Aubergine
1 Courgette
1 Rode Paprika, ontzaaden gehalveerd
2 el Olijfolie
50 g Pesto
100 g Ricotta
20 g Parmezaan, geraspt
4 lapjes Rosbief

Mediterranean Club Sandwich Directions

  1. Remove the bell pepper peel. Drizzle the aubergines, zucchini and peppers on a baking sheet. Roast them in the oven at 160 ° C for 30 minutes.
  2. Cut the top of the bread and scoop it out. Brush the inside and "the hat" of the bread with pesto. Layer the zucchini and peppers in the bread. Spread the last layer with ricotta and parmezaa. Place the roast beef slices on top. Finish with eggplant.
