Delicious Belgian asparagus with mousseline sauce and smoked salmon. Served with potato with chives.

1 kg Kriel potatoes
1 g Asparagus
400 g Smoked Salmon
Chives

Mousseline

5 Egg yolks
100 g Butter
White pepper and salt
Lime juice (or lemon)

Asparagus with mousseline smoked salmon and potatoes Directions

  1. Steam or boil the potato slices.
  2. Peel the asparagus and steam or boil them.
  3. Beat 4 egg yolks with a dash of water until frothy.
  4. Melt the butter.
  5. Gently heat the egg and add the butter while whisking. Beat the mixture until frothy. Do not let it get too hot otherwise you will have an omelet ;-)
  6. Season with white pepper, salt and some lime juice.
