25 g Pistachio nuts
15 g White peppercorns
5 g dried Pink peppercorns
50 g Breadcrumbs or Panko
4 piece(s) Lamb fillet (+/- 150g st)
1 tbsp Mustard with seeds
Spinach and carrots

Lamb fillet with pepper and pistachio nuts Directions

  1. Heat the oven to 220 ° C
  2. Put the pistachio nuts and peppercorns in a food processor and coarse them, or chop the nuts and crush them with the peppercorns in a mortar. Put the mixture in a shallow dish and mix with the breadcrumb. Stir in the mustard and garlic. Mix the fillets with this mixture.
  3. Roast the meat on the rack above a baking dish for 15-20 minutes. Remove the meat from the oven, cover, leave to rest for 10 minutes and slice.
  4. Serve with the spinach leaves and carrots.
