An unusual omelette, only with the protein. With tasty Belgian asparagus in season. Also possible with green asparagus  what's used in this recipe.

Butter
3 White of eggs
1 tbsp Herbs (chives, chervil, tarragon)
Salt and freshly ground pepper
6 Green Asparagus (in pieces of 1.5 cm)
8 sneetjs Wholemeal bread, toasted
16 Cherry tomatoes, halved

Protein omelet with asparagus and herbs Directions

    • Heat the butter in a non-stick pan.
    • Beat the egg whites with a fork and add the herbs, a pinch of salt and ground pepper.
    • Pour the egg whites into the pan and quickly pull the edges to the center, so that the omelet is evenly baked.
    • Once the egg is cooked but not completely solidified, place the warm asparagus in the middle.
    • Leave the omelet on the fire for a while.
    • Make the omelet, fold it in half and let it slide on a preheated plate.
       
    • Serve with wholemeal toast and warm cherry tomatoes
     

Notes

Recipe is even better with white asparagus
