1 piece(s) Spring chickens
8 slice(s) Bacon
110 g Butter
1 piece(s) Onion, finely chopped
4 slice(s) Bread, crumbled
225 g Chicken livers, baked and chopped
Pepper and Salt
1/2 tsp Sage

Spring chicken filled with chicken liver Directions

  1. Rinse the chicks with cold water and pat them dry with kitchen paper.
  2. Season them with pepper and salt on the inside.
  3. Finely chop 4 slices of bacon.
  4. Fry the bacon with the onion in some butter.
  5. Add the chicken liver and spices and mix everything together.
  6. Fill the chickens with the mixture and close with a skewer
  7. Wrap a piece of bacon around each chick and secure it well with a cock. Lay the chicks on the grill rack, directly above the drip pan and grill them for about 1 hour and 20 minutes or until they are golden brown.
