Pour 4 Personnes

Ingrediënten

2 Pork tenderloin (+/- 600-800g in total)
10 snede(s) Ganda ham (or other dry ham)
8 stronk(en) Endives
Pepper and salt
Nutmeg
Croquettes

Mosterdsausje

1 Shallot
1 el Grain mustard 'De STer'
10 cl Beef stock
2 dl Cream
Peper and Salt

Pork tenderloin with grain mustard sauce and braised chicory Instructions

  1. Braise the chicory with pepper, salt and some nutmeg.

    Season the tenderloins with salt and pepper.
    Roll them in the Ganda ham.
    Fry them in some olive oil and butter.
    +/- 7 to 10 min. on each side.

    Finely chop a shallot.
    Braise them in a saucepan.
    Add the beef stock and reduce by half.
    Add the cream and let it boil.
    When you have a nice thick sauce, add the mustard.
    Season with pepper and salt.
  2. Fry the croquettes.
