800 g Lamb shoulder |
4 twigs fresh Thym |
20 cl Wine Vinegar |
2 leaves Laurel |
Salt |
4 red Peppers |
1 bunch Marjoram |
200 g lean Bacon in 1 piece |
Sosati Instructions
- Cut the bacon in two.
- Place the lamb pieces and the bacon pieces in different layers in an earthen jar (sandstone type) and divide the herbs between the layers.
- Cover everything with vinegar and milk and close hermetically.
- Let soak in the fridge for 2 days, stirring several times through the preparation.
- Remove the cubes of lamb after the rest period and rub them dry with kitchen paper.
- Sprinkle with salt. Cut the bacon pieces into cubes
- Peel the onions and cut into quarters.
- Make skewers with alternating quarters of onion, cubes of lamb and bacon.
- Sprinkle with pepper and roast them, depending on your wishes, ± 20 minutes the grill of the oven or on the barbecue, turning them over half the time.
