2 Pork tenderloin (+/- 600-800g in total) |
10 snede(s) Ganda ham (or other dry ham) |
8 stronk(en) Endives |
Pepper and salt |
Nutmeg |
Croquettes |
Mosterdsausje
1 Shallot |
1 el Grain mustard 'De STer' |
10 cl Beef stock |
2 dl Cream |

Pork tenderloin with grain mustard sauce and braised chicory Instructions
- Braise the chicory with pepper, salt and some nutmeg.
Season the tenderloins with salt and pepper.
Roll them in the Ganda ham.
Fry them in some olive oil and butter.
+/- 7 to 10 min. on each side.
Finely chop a shallot.
Braise them in a saucepan.
Add the beef stock and reduce by half.
Add the cream and let it boil.
When you have a nice thick sauce, add the mustard.
Season with pepper and salt. - Fry the croquettes.
