1 pack Fresh lasagna sheets (Bertagni or other) |
1 Onion |
1 clove(s) Garlic |
500 g Cherry Tomatoes |
2 tsp Italian herbs |
250 g Mascarpone |
10 slice(s) Ganda ham |
1 jar roasted Red Bell pepper's |
1 handfull Parmesan cheese |
200 g Mozzarella |
1 handfull Basil |

Lasagna caprese Instructions
- Preheat the oven to 200 degrees. Cut the mozzarella into small cubes and the grilled bell bell pepper into chunks and set aside.
- Chop the onion and garlic. Cut the cherry tomatoes into quarters. Pour a dash of olive oil in a pan and fry the onion and garlic. When the onion is nicely glazed add the cherry tomatoes. Season with Italian herbs, some salt and pepper to taste. Then add the mascarpone. Heat until the mascarpone is nicely melted and then remove the pan from the heat.
- Lightly grease the oven dish with some olive oil. Now we are going to build the lasagna. Start with lasagna sheets, layer of sauce, layer of ham and then a layer of lasagna sheets. Then another layer of sauce, ham, grilled bell bell pepper and a layer of lasagna sheets.
- Finally, the rest of the sauce, finish with pieces of mozzarella and pieces of grilled peppers. Sprinkle generously with Parmesan cheese.
- Cover the baking dish with aluminum foil and put the whole thing in the oven with foil for 20 minutes first. Then remove the foil and bake for another 10 minutes.
- Top this delicious caprese lasagna with fresh basil and serve immediately.
- Enjoy because before you know it, this delicious dish will be gone.

Wens je vegetarisch, dat is simpel. Laat gewoon de ham weg ;-)
